This simple harvest apple cake always ushers in the fall season well.
4 Cups of diced apples
1 C sugar
Toss together apples and sugar and let sugar dissolve as you make the batter.
1 C oil
1 Tbsp vanilla
2 eggs
3 C flour
1 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. baking soda
(1 C nuts, optional)
Beat oil, eggs, vanilla and sugar. Sift flour and dry ingredients. Add flour mixture to oil mixture and then mix with apples.
Pour into a greased bundt pan. Bake at 350 for 45-55 minutes.
