People keep asking me for easy recipes. I’m actually compiling a bunch of them to give as a wedding gift to a friend who is engaged and in PA school. She is worried about cooking for a hungry husband and keeping up with PA school, so she asked me to be looking for recipes. Other people have asked lately as well, so I figured I would post my favorites as I find them. Here are 5 that have been winners for us.

Crock Pot Carnitas : these have been a favorite for a few years. I make this recipe using 2 pork tenderloins and I cook on high in the crock pot for about 4 hours. I used this recipe on Sunday and they were ready when we got home from church. The meat shredded as soon as it came in contact with the fork. This would be great for a taco station at a tailgate.
Blackened Tilapia : tried this one last night, and Thomas said he was glad he married me. The blackening rub was a little too spicy for me so if you’re a wimp, beware. My sinuses are clear today, that is for sure.
Easy Garlic Chicken: made this one on Tuesday. Thomas also proclaimed his undying love for me that night. I know my husband would love me even if I burned dinner every night or didn’t cook at all (he did stick with me through the first 26 weeks of pregnancy) but it does my heart good when he proclaims his undying love for me.
Chicken in a foil packet: this was an easy way to cook chicken and veggies all at once. I posted it awhile ago but it is worth the repost.
Cilantro Lime Chicken Tacos: the cilantro pesto is to die for and easy to make. I used some of the leftover pesto for pasta and, you guessed it, Thomas swooned. Maybe he is just easy to please?
And last but not least, here is Mr. 5 month old. He was virtually impossible to photograph as he tried to eat his feet, grab the camera, and wiggle off of the chair. But here he is in all of his glory.

    I made Cilantro Lime Turkey Tacos tonight. Delicious!!! The cilantro pesto really is to die for and super easy to make…loved it! Thanks so much for sharing.

    Easy recipes are in demand! I just posted some as well. I will have to try some of these. Adam is a model baby, sign him up for a baby gap commercial. :o )
